Summary

Costa Rican Chef Luis Guillermo Castro made a gazpacho using chayote as the main ingredient; Also some yucca croquettes and Iberian chorizo. He also showed the audience the manipulation, preparation and uses of cassava and chayote and their nutritional properties. Next, a tasting was held among those attending the event, merchants from the stores and the market public.

The Trade Promotion Office of Costa Rica (PROCOMER) has developed similar events in other communities in Spanish territory, betting on the fusion of ingredients such as cassava, chayote, pineapple, plantain, among others, with products from the land of these communities.
